ほぼ全部いけるわ。標準語で言うたら「とても」「すごく」「超」にあたる万能の強調語やで。形容詞、動詞、名詞にまでかぶせられるねん。
Pretty much. In standard Japanese it maps to totemo, sugoku, or chou. It's the all-purpose intensifier, and you can stack it on adjectives, verbs, and even nouns.

つくつく。「めっちゃ食べた」「めっちゃ笑った」みたいに動作の強さを出すねん。「I ate a ton」「I laughed really hard」って感じや。
Yep. Meccha tabeta or meccha waratta turns it into 'I ate a ton' or 'I laughed really hard.' Intensifies the action itself.
